Verdejo is the star of Rueda, on the high plateau of Castilla y León. Hot days and cold nights preserve its fresh acidity and aromatic intensity. It's often picked at night to keep the grapes cool, and makes zesty, herbal whites with a distinctive, lightly bitter finish.
