The grape behind sherry — salty and nutty as Fino, rich and toasty as Oloroso.

On its own Palomino makes fairly neutral wine, which is exactly what makes it perfect for sherry. Fortified and aged in the solera system, it becomes bone-dry, salty Fino and Manzanilla under a layer of yeast called ‘flor’, or nutty, oxidative Amontillado and Oloroso. Sweet sherries are usually made from Pedro Ximénez.
