Liquid raisins — dark, silky and intensely sweet.
Pedro Ximénez is famous for the sweetest sherry of all. The grapes are laid out in the Andalusian sun until they shrivel almost into raisins, then pressed into a thick, syrupy juice that is fortified and aged. The result is nearly black, with flavours of figs, dates and molasses. In Montilla-Moriles it also makes dry wines.
