Greece's great white — razor-sharp citrus and salty, volcanic minerality.

Assyrtiko keeps its high acidity even in intense heat — a rare trait. On Santorini, ungrafted vines are trained into low ‘kouloura’ baskets to shelter the grapes from strong winds, growing in volcanic soils. The wines are bone dry, citrusy and strikingly saline, and oak-aged ‘Nykteri’ styles add richness.
